  1. I’m curious you have salt as an ingredient but in the instructions you don’t say when to add it. Could you please let me know how and when to add salt. Thanks so much

    1. Hi,
      Sorry, I will edit and make sure to mention that. I add my salt on top of the flour and then mix all well. I have found sometimes adding it to the wet ingredients makes the wet ingredients bubble a bit. Hope this helps.

    1. I have had mine turn out both ways, dense and also airy. I think a lot depends on temp of your house, how much it rises before you bake, and how well you mix/knead the dough.

  3. 1st time I had no issues it was picture perfect, today flop…the dough would not form? It started great then turned to mush befire i was even done mixing.
    So sad any ideas?

    1. That is so odd. So, I know many things can change the texture of the dough. The temp of the water, how thick or thin the starter is, too much salt, and then temp of your home as well as how much you mix things. Sorry to hear it didn’t turn out. I hope you will try again. I’ve never had a batch not work, so I really am shocked.

  4. Bread is in the oven baking now. My question is what is the best thing to use to cover the bread while it is sitting and rising? I used plastic wrap and it stuck when I went to take if off and bake (newbie here 😰) should I have sprayed lightly with non stick spray or used something totally different?

    1. Oh yeah… you must let me know how you like it. I actually use these https://joylink.io/100-disposable-shower-caps 🙂 They don’t stick, but if they do you could lightly dusk the top of the loaf before putting the shower cap on. I also use rice flour for dusting, as it’s very fine and basically I like it better than regular flour for dusting the tops of things. https://joylink.io/rice-flour

  5. I have made it twice now one didn’t rise. I have to let mine rise over night they don’t seem to rise in 4-8 hours. Could I let it rise in the fridge overnight or is counter best? I’m a newbie here.

    1. Hi, Thanks for giving my recipe a try. I don’t know why one wouldn’t rise. I will say to make sure your sourdough starter is nice and bubbly, and that you use warm water when mixing ingredients. I don’t think they will rise in the fridge. The fridge is more used for cold proofing of a regular sourdough recipe, not for something meant to bake same day. You could try leaving out on the counter overnight, but it might over proof (rise), or get dried out.
      If you a warmer spot in your house you can place them there. Or, what I like to do is put them in either my oven with the oven light on, or in my microwave that’s over my stove, and turn the light on that is under the microwave.

  6. I made this for the first time and it was fantastic. My family loved it. The only problem I have is that it isn’t enough! Can the recipe be doubled?

    1. Hi, So glad you like it. Actually, I 1 1/2 the recipe, and then use a smaller loaf pan. But, you could just double it and use the big loaf pans as well.
