If you make sourdough bread chances are you have a ton of discard in your fridge. Don’t let it sit, or go to waste. Make the best sourdough discard donuts recipe. These are soft and chewy, just like Grandma used to make.
This recipe is now my favorite. Of course I love all my sourdough recipes, but this one I had so much fun making because I took my dough to the bar I work at and used the commercial deep fryers and then shared the donuts with customers and co-workers.
However, I know not everyone can make these in a commercial deep fryer, so don’t worry I will tell you how else to make them so they turn out the same way mine did.
My Grandma used to make the best donuts! She did 2 kinds. Ones that were a runny batter and she used a donut press thing to drop them into the hot grease. The other was like this one. I don’t know if she used sourdough, as I was young and don’t remember how she made them, just that they were amazing! I do know that mine did taste like the ones I remember her making.
Enough chatter, let’s get to the donut making!

Sourdough Discard Donut Recipe
Ingredients
- 2 cups flour (all purpose or bread)
- 2 1/4 teaspoons baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3 tablespoons butter
- 3 tablespoons lard
- 1/2 cup unfed sourdough starter (discard)
- 1/2 cup milk of choice
Directions
- In a bowl combine flour, baking powder, sugar, salt and nutmeg and cinnamon.
- Cut in butter and lard with a pastry blender or your hand until mixture is short and fine crumbed.
- Add sourdough starter and milk; mix to form a soft dough.
- Knead 5-6 times while in the bowl. Basically just mix well with your hand.
- Pour dough out on a floured surface and knead a few more times to make sure it’s all mixed well.
- On a lightly floured surface, pat or roll out dough to 1/4 inch thickness.
- Cut out donut shapes using either a donut cutter or whatever you have handy.
- Re-roll scraps and continue making donuts until all dough is used.
- Cut out donut holes with either a donut cutter or a small lid off of some kind of condiment. Be creative.
- Heat deep fryer to 350F/180C. You can also just use a big stock pot with grease of choice in it and a thermometer and heat to same temperature.
- Fry donuts 3-5 minutes on each side until golden brown.
- Drain on paper towels.
- While still hot, generously roll each donut in a mixture of 1/2 cup sugar and 2 teaspoons cinnamon.
- Yield 12-13 donuts.
- You will totally want to double this recipe!

Notes
The amount of donuts/donut holes depends on how thick you roll the dough. If you want puffier donuts, make the dough a bit thicker.
