If you are living the sourdough life, you know there are thousands of recipes for bread. However, most take a few days from start to finish. That is why my favorite is my easy same day sourdough sandwich bread recipe. It’s a one day bread that has a ton of flavor, texture and the perfect crust for any kind of sandwich you desire to eat.
With sourdough recipes the key ingredient is of course the sourdough starter. So, for those who tend to bake weekly or even daily, chances are you have a healthy starter on hand.
My starter usually lives in my fridge and I pull her out early in the morning, feed her mid-day and then bake with her the next morning. She’s not failed me once, and I’ve only been baking sourdough bread since May 2024. Maybe the fact that my Grandma baked a ton and I inherited her skills, or just the fact that I honed my own skills in the baking department. However, my bread is always a hit with my family and all who order from me.
Sourdough Sandwich Bread
Most sourdough recipes are fairly easy, and this isn’t really much different. However, this is a one day recipe. Meaning, if your starter is active in the morning you can be eating fresh bread that same evening. That is the think I like the most with this, because I’m impatient when I want bread.
Plus, a sandwich loaf is way more versatile than the standard loaf of sourdough bread. It fits the toaster better, makes better sandwiches and has a softer crust that doesn’t tear up the inside of my mouth.
Also, if you like to RV like I do, this is a great one to make while RV’ing.

Ingredients
- 1 Cup Warm Water – I just use warm tap water for this.
- 1 Cup Active and Bubbly Sourdough Starter – I feed mine day before and then start this in the morning.
- 1/4 Cup Honey
- 1/4 Cup Oil of choice (I use either avocado or olive oil)
- 1 1/2 tsp. Salt
- 3 1/2 Cups Bread Flour plus another 1/4-1/2 cup for flouring the working surface.
Using the honey in this recipe helps to give the bread a touch of a sweetness that a regular loaf doesn’t have. If you choose not to have that, just omit the honey. It will still be amazing!
Instructions
- Grab yourself a big bowl, my favorite to use is a glass bowl mixing bowl.
- Add in the sourdough starter
- Pour in the water
- Mix water and starter really well
- Add in oil and honey, mix well
- Pour in flour, 1 cup at a time and mixing well.
- Add salt on top of flour (with the first cup).
- Once all flour is mixed in, turn out on a floured surface
- Kneed dough for about 5 min and shape into bread pan loaf shape
- Place parchment paper in bread pan, and place dough on parchment paper
- Cover and let rise in a warm place for 4-8 hours.
- When the dough tops over the pan, it’s time to bake
- Preheat oven to 350 degrees F.
- Bake for 40 min
- Take out of the oven, pull from the pan and place on wire rack to cool
- Cool completely before cutting
Enjoying your Easy Same Day Sourdough Sandwich Bread
Once my loaf is cooled I slice it into my desired thickness and put it into 2 Ziplock bags and in the freezer. This way I can just take out however many pieces I want, from the freezer, and either let them thaw or pop them in my toaster.
I also like to do a full recipe and then another half and then I make 2 loaves and use the medium size bread pans. This way the slices aren’t as big and fit in my toaster nice.

I’m curious you have salt as an ingredient but in the instructions you don’t say when to add it. Could you please let me know how and when to add salt. Thanks so much

Sorry, I will edit and make sure to mention that. I add my salt on top of the flour and then mix all well. I have found sometimes adding it to the wet ingredients makes the wet ingredients bubble a bit. Hope this helps.

I have had mine turn out both ways, dense and also airy. I think a lot depends on temp of your house, how much it rises before you bake, and how well you mix/knead the dough.

1st time I had no issues it was picture perfect, today flop…the dough would not form? It started great then turned to mush befire i was even done mixing.
So sad any ideas?

That is so odd. So, I know many things can change the texture of the dough. The temp of the water, how thick or thin the starter is, too much salt, and then temp of your home as well as how much you mix things. Sorry to hear it didn’t turn out. I hope you will try again. I’ve never had a batch not work, so I really am shocked.

Bread is in the oven baking now. My question is what is the best thing to use to cover the bread while it is sitting and rising? I used plastic wrap and it stuck when I went to take if off and bake (newbie here ๐ฐ) should I have sprayed lightly with non stick spray or used something totally different?

I actually use these https://joylink.io/100-disposable-shower-caps ๐ They don’t stick, but if they do you could lightly dusk the top of the loaf before putting the shower cap on. I also use rice flour for dusting, as it’s very fine and basically I like it better than regular flour for dusting the tops of things. https://joylink.io/rice-flour
