Ingredients for Cauliflower Shrimp Fried Rice
This recipe is simple and contains very few ingredients. As said above, this recipe is something each person can make to suit their likes/needs. See below ingredient adjustments for Paleo/Keto/Whole 30.
Yield: 4 servings
1 Tbs of butter
2 cups of fresh snow peas
1 pound of cooked shrimp
12 oz bag of frozen Cauliflower rice (if using fresh, grate about 2 cups of Cauliflower, cook/steamed before incorporating to Snow peas/shrimp mix)
Salt & Pepper to taste
Chopped Celery for garnish
Directions
- Steam the cauliflower rice bag according to manufacturer’s direction
- Heat butter in a large skillet over medium-high heat. The perfect pan for this is the Ninja Neverstick 12″ pan.
- Incorporate the snow peas and cook for about 4 minutes
- Add the cooked shrimp and toss for 1 minute
- Incorporate the steamed cauliflower rice
- Mix well and add salt and pepper to taste
- Chop some celery to add on top for garnish and crunch
Ingredient Adjustments for the Cauliflower Shrimp Fried Rice
PALEO: Use clarified butter / Ghee or olive oil instead of regular butter
KETO: Depending on your FAT macro you can increase the butter amount / CARB macro reduce amount of Snow peas or substitute with broccoli or zucchini
WHOLE 30: No ingredient adjustments needed

Final Thoughts
Not everyone is a fan of cauliflower rice, I get that. It actually took my husband a while before he knew if he liked it. Sometimes it just takes the right spices and other ingredients to help ones tastebuds decide they like something. And, for others it’s a texture issue.
